Nigari

This is a salt which will coagulate the tofu. the packet on the left is liquid. The one on the right is powder. I used the blue package: 12.5ml of solution to 50ml of hot water then add to the soy milk. Let sit there for 15min.
You can use lemon juice as a coagulant.
